This recipe comes from Jamie: Eat Yourself Healthy and is a brilliant example of how bold flavours and healthy eating don’t have to be at odds. The combination of ras el hanout–spiced chicken with blistered blueberries sounds unusual on paper, but it works beautifully in practice.
The spice blend gives the chicken warmth and depth, while the blueberries add a subtle sweetness and tang not unlike cranberry with roast meat.
🛒 Ingredients
- 2 × 150g skinless free-range chicken breasts
- 1½ teaspoons ras el hanout, plus extra to serve
- Olive oil
- 2 cloves of garlic
- 1 lemon (I use a peeler for the zest)
- 160g blueberries
- 1 × 250g pack of cooked mixed grains
- 1 × 400g tin of lentils (with their juice)
- 160g frozen peas
- ½ a bunch of fresh mint
- 30g feta cheese
- Sea salt & black pepper
🔪 Method

Coat the chicken
Place the chicken breasts on a board, lightly score the thickest parts, then rub all over with 1½ teaspoons of ras el hanout, a pinch of sea salt, black pepper and a drizzle of olive oil, making sure they’re evenly coated. -
Cook the chicken
Heat a large non stick frying pan over a medium-high heat. Add a little olive oil, then cook the chicken for about 5 minutes, turning halfway, until golden, spiced and cooked through. -
Add aromatics & berries
Peel and finely slice the garlic. Use a speed-peeler to strip the lemon zest. Add both to the pan and cook for a minute until fragrant, then add the blueberries. Let them blister and start to pop, releasing their juices. -
Rest the chicken
Transfer the chicken and blueberries to a board to rest. Keep the pan on the heat. -
Build the bowl
Tip the cooked grains and lentils (with their juice) into the pan. Cook for 2 minutes, stirring, then add the frozen peas and heat through. -
Finish & serve
Squeeze in half the lemon juice, season to taste and divide between bowls. Slice the chicken and lay it on top, spooning over the blueberries and any resting juices. Pick over the mint, crumble over the feta and finish with a light dusting of extra ras el hanout if you like.
📝 Notes
- Coating the chicken before cooking is essential it allows the ras el hanout to toast slightly and fully flavour the meat.
- The blueberries soften and sweeten as they cook, balancing the spice rather than overpowering it.
- Ideal for a light dinner or a filling lunch bowl.
